These days it seems every second person you meet is restricting carbs or gluten, while the rest are busy posting crumb shots of their latest sourdough loaf on social media.

Bread was once the most staple food of all and versions have existed in every civilisation since humans first learned to cook – the very staff of life. Now, though, it seems, bread is complicated.

But here’s a radical thought. What if, instead of being a demon to be avoided, a guilty pleasure, the bread you eat was health-giving rather than depleting? A source of high-quality nutrition supporting diversity in your microbiome and those all-important good gut bacteria?
